Instructions
1
|
Cook the pasta according to package directions in salted water. Reserve ½ cup of the pasta water before draining.
2
|
Melt the butter in a large skillet or saucepan over medium heat. Add the garlic (if using) and cook for about 1 minute, just until fragrant.
3
|
Slowly pour in the heavy cream, whisking constantly. Bring to a gentle simmer and cook for 3–4 minutes until slightly thickened. Reduce the heat to low and gradually whisk in the Parmesan cheese until smooth and creamy.
4
|
Season with salt, pepper, Italian seasoning, and a pinch of nutmeg. Taste and adjust as needed.
5
|
Toss the cooked pasta directly into the sauce, adding a splash of reserved pasta water if needed to loosen it up and thin the sauce.
6
|
Serve immediately, topped with extra Parmesan and parsley if desired.

Tips & Tricks (5)
- Toast Your Garlic First 🧄Mince garlic finely and cook it in butter for 30-45 seconds over medium heat until fragrant but not browned—this releases its flavors without creating bitter burnt notes that overpower the delicate sauce.
- Temper Your Cream Gradually 🌡️Add heavy cream slowly while whisking constantly and maintain medium-low heat to prevent the sauce from breaking or becoming grainy—rapid heating can cause the proteins to separate.
- Grate Cheese Fresh & Fine 🧀Always use freshly grated Parmigiano-Reggiano rather than pre-grated cheese, which contains anti-caking agents that create a gritty texture and prevent smooth emulsification with the cream.
- Reserve Pasta Water as Liquid Gold 💧Save 1 cup of starchy pasta cooking water before draining and add it tablespoon-by-tablespoon to your sauce if it's too thick—the starch helps the sauce cling beautifully to noodles and maintain silky consistency.
- Season in Layers Throughout 🌿Add salt, black pepper, and nutmeg at different stages (after garlic, after cream, and at the end) rather than all at once—this builds complex flavor and allows you to taste and adjust as the sauce develops.
