Ingredients

  • 5 ears - fresh corn
  • 2 tablespoons - butter
  • ¼ cup - red onion
  • 2 tablespoons - jalapeno
  • 2 clove - garlic
  • 2 tablespoons - mayonnaise
  • 2 tablespoons - sour cream
  • 1 - lime
  • ½ tsp - chili powder
  • 1 tsp - all-purpose seasoning
  • ¼ cup - Queso Fresco
  • ¼ cup - fresh cilantro

Instructions

  1. Melt butter in a large skillet over medium high heat.
  2. Add corn and sautee until golden and slightly charred, about 10 minutes.
  3. Remove corn from the pan and place in a large bowl.
  4. Add onion, jalapeno and garlic to the skillet and saute for 2-3 minutes until vegetables are softened and fragrant.
  5. Remove vegetables from pan and place in bowl with corn.
  6. In a bowl, combine mayo, sour cream, lime juice, chili powder and house seasoning blend.
  7. Whisk until combined.
  8. Pour dressing over the corn and stir to combine.
  9. Add Queso Fresco and cilantro and serve immediately.
