  • 3 cup - cold leftover mac and cheese
  • 6  - mozzarella balls or cubes
  • 1 cup - all-purpose flour
  • 4  - eggs
  • 2 cup - breadcrumbs
  •   - Salt
  •   - Black pepper
  •   - Vegetable oil
  •   - Parmesan cheese
  •   - Fresh basil
  •   - Favorite dipping sauce

  1. Scoop a handful of cold mac and cheese and flatten it in your hand.
  2. Place a small mozzarella ball in the center and shape the mac and cheese around it to form a sealed ball.
  3. Freeze the balls for 30 minutes to help them hold shape.
  4. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs, each seasoned with salt and pepper.
  5. Roll each mac ball in flour, then egg, then breadcrumbs. Repeat egg and breadcrumb steps for a double coating.
  6. Freeze the coated balls for 1 hour for best frying results.
  7. Heat vegetable oil in a deep pan over medium heat. Fry each ball until golden brown and crisp on all sides.
  8. Remove and drain on paper towels. Sprinkle with salt while hot.
  9. Serve with Parmesan, fresh basil, and your favorite dipping sauce.
