Tips & Tricks (5)
- Don't Overcook the Shrimp 🦐Remove shrimp from heat the moment they turn pink and opaque (about 2-3 minutes per side), as they continue cooking residually and become rubbery if overdone.
- Toast Your Garlic Carefully 🧄Cook minced garlic for just 30-45 seconds until fragrant but not browned, as burnt garlic becomes bitter and ruins the delicate cream sauce.
- Reserve Pasta Water Before Draining 💧Save at least ½ cup of starchy pasta water before draining, then add it gradually to your cream sauce to achieve the perfect consistency and help it coat the pasta beautifully.
- Temper the Cream Properly 🥛Add heavy cream off-heat or reduce heat to low before pouring it in to prevent the sauce from breaking or curdling due to temperature shock.
- Layer Your Parmesan Addition 🧀Add grated Parmesan in two stages—half while the sauce is still warm to emulsify smoothly, and the remainder at plating to maintain fresh, sharp cheese flavor.
