Instructions
1
|
Preheat oven to 350℉. Line a rimmed baking sheet with parchment or a silicone baking mat; set aside.
2
|
In a mixing bowl, add the butter, 1 cup of sugar and the brown sugar, and use a mixer to cream together until it's light and fluffy.
3
|
Add the eggs, one at a time, mixing between each.
4
|
Add the molasses and mix until incorporated.
5
|
To a separate bowl, add the flour, baking soda, ginger, cinnamon, cloves and salt and whisk until combined.
6
|
Slowly incorporate the dry ingredients into the butter mixture until the mixture is just combined. Be careful not to over mix.
7
|
Cover the dough with plastic wrap and refrigerate for 2 hours.
8
|
Add the remaining ¼ cup of sugar to a small bowl.
9
|
Roll the dough into 1-inch balls and then roll each ball into the sugar until it’s fully coated.
10
|
Place the balls on the prepared cookie sheet about 1-2 inches apart.
11
|
Bake for 8-10 minutes or until the cookies begin to slightly crack on top.
12
|
Remove the cookies from the oven and let cool for 4-5 minutes before transferring the cookies to a wire rack to continue cooling.

Tips & Tricks (5)
- Brown Your Butter First 🧈Melt butter until it turns golden brown before creaming with sugars to add a rich, nutty depth that elevates the cookie's warm spice profile.
- Chill Dough Before Rolling 🧊Refrigerate the dough for at least 30 minutes so it won't stick when rolling and coating in sugar, resulting in perfectly cracked, chewy centers.
- Bloom Your Spices 🌟Toast the ground ginger, cinnamon, and cloves in a dry pan for 30 seconds before adding to the dough to intensify their aromatic flavors significantly.
- Underbake for Chewiness ⏱️Remove cookies when the edges are set but the centers still appear slightly underdone—they'll continue cooking as they cool for that signature chewy texture.
- Use Full-Molasses Flavor 🍯Opt for unsulfured or blackstrap molasses rather than light molasses to deliver the deep, authentic grandma-style taste that makes these cookies memorable.
