Instructions
1
|
Preheat oven to 350℉. Line a rimmed baking sheet with parchment or a silicone baking mat; set aside.
2
|
In a mixing bowl, add the butter, 1 cup of sugar and the brown sugar, and use a mixer to cream together until it's light and fluffy.
3
|
Add the eggs, one at a time, mixing between each.
4
|
Add the molasses and mix until incorporated.
5
|
To a separate bowl, add the flour, baking soda, ginger, cinnamon, cloves and salt and whisk until combined.
6
|
Slowly incorporate the dry ingredients into the butter mixture until the mixture is just combined. Be careful not to over mix.
7
|
Cover the dough with plastic wrap and refrigerate for 2 hours.
8
|
Add the remaining ¼ cup of sugar to a small bowl.
9
|
Roll the dough into 1-inch balls and then roll each ball into the sugar until it’s fully coated.
10
|
Place the balls on the prepared cookie sheet about 1-2 inches apart.
11
|
Bake for 8-10 minutes or until the cookies begin to slightly crack on top.
12
|
Remove the cookies from the oven and let cool for 4-5 minutes before transferring the cookies to a wire rack to continue cooling.

Tips & Tricks (5)
- Brown Your Butter First 🧈Melt butter over medium heat until golden brown with a nutty aroma before creaming with sugars—this deepens the spice flavors and adds sophisticated complexity to your cookies.
- Bloom Your Spices in Molasses 🌶️Warm the molasses slightly and whisk in your ground ginger, cinnamon, and cloves before mixing with other ingredients to awaken their essential oils and intensify their warm, spiced character.
- Chill Dough for Superior Chewiness ❄️Refrigerate your dough for at least 2 hours (or overnight) before baking—this prevents spreading and creates that signature chewy center with slightly crispy edges grandma's cookies had.
- Roll in Sugar Before Baking 🍪After chilling, roll dough balls in granulated sugar before baking to create a beautiful crackled, candied exterior that adds textural contrast and visual appeal.
- Underbake Slightly for Optimal Texture ⏱️Remove cookies from the oven when the edges are set but the centers still jiggle slightly—they'll continue cooking on the pan and achieve that irresistible chewy consistency as they cool.
