Tips & Tricks (5)
- Master Gluten-Free Flour Blending 🌾Use a blend of gluten-free flours (rice flour, tapioca starch, and cornstarch) instead of single flour to replicate wheat's structure and achieve that signature soft texture with proper spread.
- Chill Dough for Perfect Shape 🧊Refrigerate your dough for at least 30 minutes before rolling and cutting to prevent excessive spreading and maintain crisp edges while keeping centers soft.
- Add Xanthan Gum for Binding 🔗Include ¼ teaspoon of xanthan gum per cup of gluten-free flour to improve binding and prevent crumbly, dry cookies that fall apart easily.
- Cream Butter and Sugar Thoroughly ✨Beat butter and granulated sugar for 3-4 minutes until pale and fluffy to incorporate air—this creates lift and ensures cookies bake evenly without dense centers.
- Use Natural Food Coloring 🎨Replace synthetic dyes with natural food colorings (beet juice, turmeric, spirulina) in your icing for a healthier, dye-free option that's perfect for kids and gluten-free guests.
