Ingredients

  • 2 tablespoons - olive oil
  • 1 - baguette
  • 5 ounces - goat cheese
  • 8 ounces - cream cheese
  • 1 tsp - honey
  • 1 - pomegranate
  • ¼ cup - fresh mint

Instructions

  1. Preheat oven to 350 degrees F. Slice baguette on a diagonal into ½-inch slices and place on a baking sheet.
  2. Drizzle and brush baguette slices with olive oil and place in oven for about 15 minutes, flipping halfway through, until just browned and crispy, yet soft in the center.
  3. Meanwhile, use a hand mixer to blend together goat cheese, softened cream cheese and honey until smooth. Set aside.
  4. Spoon a layer of goat cheese onto each slice of toasted baguette and place on a serving platter.
  5. Top each toast with a spoonful of pomegranate seeds and finish with a sprinkling of chopped mint. Serve.
