1/2
Golden Parmesan-Herb Crusted Salmon
Instructions
1
Preheat the oven to 400°F.
2
Line a baking sheet with parchment paper.
3
Gently pat salmon fillets dry with paper towels. Place on the baking sheet, skin side down.
4
Sprinkle the tops of the salmon with the salt and black pepper.
5
Finely mince the fresh herbs. Transfer to a mixing bowl.
6
Place the butter in a microwave-safe bowl. Microwave on high until melted, 30-40 seconds.
7
Add the Parmesan, fresh breadcrumbs, garlic powder, salt, and black pepper to the minced herbs. Mix with a fork to combine, then add the melted butter and mix to evenly moisten the crumbs.
8
Using a spoon and clean hands, divide the Parmesan and herb mixture equally between each salmon fillet. Gently pat into an even layer over the tops of the fillets.
9
Bake the salmon on middle rack of oven until the crust is golden brown and salmon flakes easily with a fork, 12-15 minutes.
10
Check to see that salmon is done. Remove from oven or add time as needed.
11
Squeeze fresh lemon juice over salmon if desired. Serve immediately. Refrigerate leftovers in an airtight container for up to 2 days.

Tips & Tricks (5)
- Pat Salmon Dry for Crispy Crust 🎯Use paper towels to thoroughly dry the salmon fillets before applying the crust; moisture prevents browning and creates a soggy topping instead of that coveted golden crunch.
- Toast Breadcrumbs First 🍞Lightly toast your fresh breadcrumbs in a dry pan for 2-3 minutes before mixing with Parmesan to deepen their flavor and ensure even browning in the final dish.
- Butter Base Prevents Sticking 🧈Spread a thin layer of softened butter directly on the salmon before pressing on your herb-Parmesan mixture; this acts as an adhesive and creates a golden, unified crust.
- Chop Herbs Just Before Assembly 🌿Mince your fresh thyme, chives, dill, and parsley immediately before use to maximize their volatile oils and bright flavor impact in the final crust.
- Low-and-Slow Finish Prevents Burning ⏱️Start at medium-high heat to sear the crust for color, then reduce to medium or medium-low to gently cook through; this prevents the Parmesan from burning while the salmon reaches perfect doneness at 125-130°F internally.
