Sherry Shallot Dressing
Simple Green Salad

Sherry Shallot Dressing

1
Place the diced shallots in a small bowl and cover them with cold water. Let the shallots sit for 10-30 minutes. (This will remove any sharp, pungent flavors.) Drain the shallots.
2
Then, place the shallots, sherry vinegar, Dijon mustard, honey, and lemon zest in a blender. Season with salt and pepper. Blend until smooth, scraping the sides of the blender with a rubber spatula halfway through.
3
With the blender running on low, slowly drizzle the olive oil and avocado oil into the dressing until it's smooth and creamy. Taste and add more salt and pepper, if needed.

Simple Green Salad

1
In a large salad bowl, combine the red butter lettuce, green leaf lettuce, sunflower seeds, parmesan, and cucumbers.
2
Right before serving, add about 1/3 of the dressing to the salad and toss well. Taste and add more dressing, salt, and pepper if needed. Enjoy!

Tips & Tricks (5)

  • Macerate Shallots for Mellower Flavor 🧅
Finely mince the shallots and let them sit in the sherry vinegar for 10-15 minutes before making the dressing—this softens their bite and creates a more sophisticated, balanced flavor profile.
  • Dry Your Greens Thoroughly 💧
Wash and spin-dry your lettuce at least 30 minutes before serving; excess water dilutes the dressing and prevents it from properly coating the leaves.
  • Toast Sunflower Seeds for Depth 🌻
Lightly toast the sunflower seeds in a dry pan for 2-3 minutes before adding to the salad to enhance their nutty flavor and improve texture contrast.
  • Emulsify with Proper Oil Ratios 🫒
Use a 1:2 ratio of acid to oil, and drizzle the avocado oil slowly while whisking vigorously to create a creamy, cohesive emulsion rather than a separated dressing.
  • Add Avocado and Parmesan Last 🥑
Slice the avocado and add both it and freshly-grated Parmesan just before serving to prevent browning and ensure the cheese maintains its delicate texture and sharp flavor.
