Instructions
1
|
Melt 2 Tablespoons of butter in a large pot over medium heat.
2
|
Once hot and melted, add the onions and cook until golden, about 4 minutes.
3
|
Add the sliced mushrooms and cook until your desired color and texture. (We did 4 minutes.)
4
|
Remove the onions and mushrooms to a small bowl.
5
|
Place the remaining butter in the pot.
6
|
Meanwhile, prepare the pasta according to package directions.
7

Whisk the flour into the hot, melted butter to form a roux, then whisk in the milk. Season with salt, pepper and thyme and cook for 8 minutes until thickened.
8
|
Stir in the chicken broth, pasta, green peas and cooked ham and cook until ham is warmed through.
9
|
Set oven to broil.
10
|
Pour the pasta mixture into an 8" x 8" casserole dish and sprinkle the grated Parmesan cheese overtop.
11
|
Place the casserole dish in the oven and broil until cheese is golden and melted.

Tips & Tricks (5)
- Toast Your Pasta Al Dente 🍝Cook pasta 1-2 minutes under al dente before mixing into the casserole—it will continue cooking in the oven and won't turn mushy in the creamy sauce.
- Make a Perfect Béchamel Base 🧈Create a smooth roux by cooking butter and flour together for 1-2 minutes before whisking in warm broth and milk—this prevents lumps and ensures a silky sauce.
- Sauté Mushrooms Separately First 🍄Brown the mushrooms in a hot pan with butter before adding to the casserole to concentrate their umami flavors and prevent them from releasing excess moisture into the dish.
- Layer Your Parmesan Strategically 🧀Reserve half your parmesan for the topping and mix the rest into the warm sauce—this creates a creamy interior while building a golden, crispy crust on top.
- Fresh Thyme Timing Technique 🌿Add half the thyme to the sauce while cooking and sprinkle fresh leaves on top just before serving to maintain bright herbal notes that complement the rich ham and cream.
