Instructions
1
In a large stockpot, cook pasta according to package directions. Once cooked, drain, reserving at least a ½ cup of pasta water.
2
As the pasta cooks, warm olive oil in a large skillet over medium heat. Stir in 2-4 tablespoons harissa paste, coconut milk, salt, and garlic powder. Bring to a simmer then reduce heat, stirring occasionally.
3
Once the pasta is cooked, add to the skillet, and gently stir until well-combined and fully coated with the sauce. Add reserved pasta water 1 tablespoon at a time, if needed to loosen the sauce.
4
Serve warm and enjoy immediately! Store leftovers in an airtight container in the refrigerator for 3-5 days. To reheat, warm in the microwave until heated through.

Tips & Tricks (5)
- Balance Harissa Heat with Coconut Milk 🌶️Add harissa paste gradually while tasting, as its spice intensity varies by brand; the coconut milk will temper the heat, so you can be bolder than you think without overwhelming the dish.
- Bloom Garlic Powder in Oil First 🧄Toast the garlic powder in olive oil for 30-60 seconds before adding other ingredients to unlock its full aromatic potential and prevent a raw, dusty flavor.
- Reserve Pasta Water for Sauce Consistency 💧Save 1 cup of starchy pasta cooking water before draining; use it to thin the creamy sauce to your desired consistency and help it coat the pasta perfectly.
- Finish with Quality Olive Oil and Fresh Citrus 🍋Drizzle a high-quality extra virgin olive oil and a squeeze of fresh lemon juice just before serving to brighten the rich sauce and add complexity to the spiced flavors.
- Don't Overcook Pasta with Creamy Sauce 🍝Cook pasta to al dente (slightly firm) since it will continue softening when combined with the warm harissa sauce, preventing mushy results.
