Tips & Tricks (5)
- Chill Batter Before Baking 🧊Refrigerate your cake batter for 30 minutes before baking to prevent spreading and ensure dense, fudgy cake pops that hold their shape perfectly on the stick.
- Applesauce Substitution Balance ⚖️Replace up to 50% of oil with unsweetened applesauce, but don't exceed this ratio or your cake pops will become dry—the remaining fat is essential for moisture and texture.
- White Chocolate Dipping Temperature 🌡️Heat white chocolate to exactly 88-90°F using a double boiler, then add a teaspoon of coconut oil to thin it without scorching—this prevents a thick, chalky coating and ensures smooth, glossy coverage.
- Pumpkin Puree Moisture Control 💧Strain your canned pumpkin puree through cheesecloth for 15 minutes to remove excess moisture, preventing dense cake pops and ensuring the applesauce can properly hydrate the dry ingredients.
- Stick Insertion Timing 🍭Dip lollipop stick tips in melted white chocolate before inserting into cooled cake balls—this acts as adhesive and prevents sticks from sliding out during the final chocolate dip.
