Instructions

1
|
Preheat the oven to 350°F (180°C). Remove the wheel of camembert from the box and discard any wrappings. Place the camembert in a small baking dish (or back in the bottom of the box it came in). Bake the camembert for 15-20 minutes, just until it's warmed through and melty in the center.
2
|
Meanwhile, pour the pecans into a skillet. Toast over medium heat until they're lightly browned and fragrant, about 4-5 minutes.
3
|
Once the pecans are toasted, add the honey and rosemary. Bring it to a simmer for 1-2 minutes, stirring often, until the pecans are glazed.
4
|
Spoon the glazed pecans and any leftover honey over the warm camembert. Sprinkle with flaky salt, to taste. Serve with crackers, fresh fruit, and/or bread. Enjoy!

Tips & Tricks (5)

  • Score the Rind Strategically 🔪
Make shallow crosshatch cuts into the camembert's rind before baking to help the honey and seasonings penetrate while keeping the cheese intact and preventing uneven melting.
  • Toast Pecans First for Depth 🥜
Briefly toast the pecan halves in a dry skillet for 2-3 minutes before adding to maximize their nutty flavor and prevent them from becoming soggy in the melted cheese.
  • Use Room Temperature Camembert ❄️
Remove the cheese from the refrigerator 15 minutes before baking so it reaches room temperature, ensuring even, creamy melting throughout rather than a cold center with overcooked edges.
  • Drizzle Honey at the Right Moment 🍯
Add honey during the last 2 minutes of baking rather than before, so it stays glossy and aromatic instead of caramelizing too heavily or soaking into the cheese.
  • Fresh Rosemary Over Dried 🌿
Tear fresh rosemary leaves and sprinkle them on top just before serving to preserve their bright, piney oils and prevent the dried herb flavor from overpowering the delicate camembert.
