Instructions
1
|
Cut the chicken breast into evenly sized bite-sized pieces and set aside.
2
|
In a bowl, mix flour, water, cornstarch, honey, salt, pepper, paprika, and garlic powder until smooth. Add the chicken pieces and mix until fully coated.
3
|
In a separate bowl, combine 60 g flour and 30 g cornstarch. Take each coated chicken piece and toss it in the dry mixture. Press slightly so the coating sticks well. This creates extra crispiness.
4
|
Heat oil to medium-high (level 8 out of 9). Fry the chicken bites until golden and crispy. Remove and let them rest briefly on a wire rack. Once all pieces are fried, fry them a second time for 1–2 minutes until deeply golden and extra crispy. Remove and let drain again on a rack.
5
|
While the chicken is frying, prepare the sauce. In a pan, gently heat honey and add the minced garlic. Season with salt, pepper, paprika, and garlic powder. Let it simmer briefly until slightly thickened and aromatic.
6
|
Place the hot, crispy chicken bites in a large bowl. Pour the warm honey garlic sauce over them and toss until evenly coated. Serve immediately while crispy.

Tips & Tricks (5)
- Dry Your Chicken Thoroughly 💧Pat the chicken bites completely dry with paper towels before coating—moisture prevents crispy breading and causes splattering during the double-fry process.
- Double-Dredge for Extra Crunch 🍗After the first flour coating, dip briefly in a cornstarch-water slurry, then coat with flour again before frying to create an extra-crispy, textured shell that stays crunchy longer.
- Oil Temperature is Critical 🌡️Maintain oil at 325°F for the first fry and 350°F for the second fry—use a thermometer to ensure proper temperature, which prevents greasy chicken and ensures golden color.
- Bloom Your Garlic in the Glaze 🧄Toast minced garlic in warm oil for 30 seconds before adding honey and cornstarch slurry to release its essential oils and develop deep, complex garlic flavor without bitterness.
- Toss Immediately While Hot ✨Add the crispy chicken bites to the warm honey-garlic glaze immediately after the second fry while they're still hot—this allows the coating to adhere and creates that signature sticky, glossy finish.
