Instructions
1
Cut the chicken breast into evenly sized bite-sized pieces and set aside.
2
In a bowl, mix flour, water, cornstarch, honey, salt, pepper, paprika, and garlic powder until smooth. Add the chicken pieces and mix until fully coated.
3
In a separate bowl, combine 60 g flour and 30 g cornstarch. Take each coated chicken piece and toss it in the dry mixture. Press slightly so the coating sticks well. This creates extra crispiness.
4
Heat oil to medium-high (level 8 out of 9). Fry the chicken bites until golden and crispy. Remove and let them rest briefly on a wire rack. Once all pieces are fried, fry them a second time for 1–2 minutes until deeply golden and extra crispy. Remove and let drain again on a rack.
5
While the chicken is frying, prepare the sauce. In a pan, gently heat honey and add the minced garlic. Season with salt, pepper, paprika, and garlic powder. Let it simmer briefly until slightly thickened and aromatic.
6
Place the hot, crispy chicken bites in a large bowl. Pour the warm honey garlic sauce over them and toss until evenly coated. Serve immediately while crispy.

Tips & Tricks (5)
- Double-Fry Temperature Strategy 🌡️Fry first at 325°F for 4-5 minutes to cook through, then immediately increase to 375°F for 1-2 minutes to achieve that signature golden crispiness without burning the coating.
- Cornstarch Coating Secret ✨Mix cornstarch with all-purpose flour in a 1:1 ratio and let the coated chicken rest in the refrigerator for 15 minutes before frying to help the coating adhere better and fry crispier.
- Sticky Glaze Timing 🍯Toss the chicken in the honey garlic sauce immediately after the second fry while still hot, then let it sit for 2-3 minutes so the glaze sets and coats evenly without becoming soggy.
- Garlic Flavor Layering 🧄Use both fresh minced garlic and garlic powder in the glaze—fresh garlic provides vibrant flavor while garlic powder in the coating adds depth and prevents the fresh garlic from burning during frying.
- Oil Quality and Temperature Control 🔥Use neutral high-smoke-point oil like vegetable or canola oil and maintain consistent temperature with a thermometer, as fluctuations will result in either greasy or unevenly cooked bites.
