
Honey Garlic Salmon

Ingredients
- 1 ½ pounds - salmon fillets
- 2 tablespoons - olive oil
- 2 tablespoons - coconut aminos
- 2 tablespoons - honey
- 1 tbsp - fresh lemon juice
- 3 cloves - garlic
- 2 teaspoons - Dijon mustard
- ½ tsp - sea salt
- ¼ tsp - black pepper
Instructions
- Place the salmon fillets on a parchment or foil lined baking sheet at room temperature for 20-30 minutes prior to cooking so that they cook evenly. Remove any pin bones as necessary. Season lightly with salt and pepper.
- Preheat the oven to 400 degrees.
- Whisk together the olive oil, coconut aminos, honey, lemon juice, garlic, Dijon mustard, salt and pepper in a medium bowl.
- Brush half of the sauce over the salmon fillets and bake for 8-10 minutes. Brush the remaining sauce over the top and continue baking for 3-5 minutes longer or until the salmon reaches 130 degrees for medium doneness (or about 145 degrees according to USDA recommendations). Note that cooking time will vary depending on the thickness of your salmon, so be sure to check for doneness after 8 minutes.
- Remove from heat and serve immediately with your favorite sides. Enjoy!
