Tips & Tricks (5)
- Dry Rub Application Timing ⏰Apply your homemade dry rub 2-4 hours before cooking (or overnight) to allow the spices to penetrate the meat deeply, creating a flavorful bark that won't wash away during the Instant Pot cooking process.
- Remove the Membrane First 🔪Always remove the thin silver membrane from the back of the ribs before rubbing and cooking—this prevents the rub from adhering properly and creates a chewy texture that detracts from tenderness.
- Natural Release for Maximum Tenderness 💨After the high-pressure cook cycle, allow the Instant Pot to naturally release pressure for 10-15 minutes rather than quick-releasing, which gives the collagen time to fully break down for fall-apart-tender meat.
- Beer Liquid Amplifies Depth 🍺Use a dark beer (stout or porter) rather than light beer in your cooking liquid to add rich, caramelized flavors that complement the spice rub and create a more complex sauce.
- Finish with a High-Heat Sear 🔥After cooking, sear the ribs under a broiler or on a hot grill for 2-3 minutes with your barbecue sauce to create a caramelized glaze and restore textural contrast to the exterior.
