Serve with some milk, ginger crisps, or a sprinkle of brown sugar on top. Pomegranate seeds were delicious on top as well if you have them. Store leftovers in a sealed container in the refrigerator for up to 5 days.

Tips & Tricks (5)
- Toast Your Spices First 🔥Bloom the ground ginger, cinnamon, cloves, nutmeg, and allspice in the Instant Pot with a touch of butter for 30 seconds before adding liquid to intensify and deepen their warm, complex flavors.
- Use the Natural Release Method ⏱️Allow 10 minutes of natural pressure release before quick-releasing to prevent the oatmeal from splattering and to achieve a creamier, more cohesive texture.
- Adjust Liquid Ratios by Oat Type 💧Steel cut oats need slightly more liquid (1:4 ratio) than rolled oats (1:3 ratio) for proper absorption, so measure carefully based on which type you're using for optimal consistency.
- Brown Sugar Creates Better Sweetness 🍯Add brown sugar after cooking rather than before to prevent crystallization and ensure it dissolves evenly, while the molasses notes complement the spice profile perfectly.
- Customize with Finishing Toppings 🎯Top with candied ginger, toasted pecans, or a drizzle of maple syrup just before serving to add textural contrast and elevated flavor complexity without overcooking.
