Instructions
1
|
Cut the tops of your bell peppers. Remove the membranes as well as the seeds.
2
|
In a medium-size bowl mix together your onion, ground turkey, cooked rice, salt and pepper, garlic, breadcrumbs, and half of the can of tomatoes (drained – save the tomato liquid and the remaining can of tomatoes).
3
|
Scoop the mixture into each of the bell peppers.
4
|
Add your water and the rest of the can of tomatoes, including the liquid, into your inner part of the instant pot. Place the trivet inside. Place the bell peppers on top of the trivet.
5
|
Lock the lid in place on your instant pot and set the sealing valve to sealed.
6
|
Set your instant pot to high pressure for eight minutes. Allow it to naturally release for 10 minutes, followed by a manual release.
7
|
Place your mozzarella cheese on top of the meat mixture of your bell pepper. Close the lid on your instant pot and set to high pressure for one more minute.
8
|
Once that minute is done, do a quick release.
9
|
Remove the bell peppers with tongs, as they will be hot.

Tips & Tricks (5)
- Pre-Cook Rice Separately 🍚Cook rice to 75% doneness before stuffing—it will finish cooking in the Instant Pot's steam, preventing mushy or undercooked rice in your final dish.
- Choose Uniform Pepper Sizes 🫑Select bell peppers of similar size and height to ensure even cooking times; cut a thin slice from the bottom if they don't stand upright in the pot.
- Brown Turkey for Depth 🍖Use the sauté function to brown ground turkey with garlic and onions before mixing with other ingredients—this develops rich, caramelized flavors that elevate the entire dish.
- Control Moisture with Breadcrumbs 🥖Toast breadcrumbs lightly in a dry pan before adding to the filling mixture to absorb excess moisture from tomatoes and prevent soggy peppers.
- Use Natural Release First ♨️Let pressure release naturally for 5 minutes after cooking, then quick-release remaining pressure to keep peppers intact and maintain their firmness.
