Preheat the oven to 350℉.

3
|
Grease a 9×13 inch pan and press biscuits into it. Bake the biscuits for 10 minutes. Remove from the oven.

Add the ground beef and onion to a large skillet and cook over medium heat, breaking the meat apart as it cooks, until no longer pink. Drain any grease.
5

Add the rotel, green chiles, taco seasoning and water to the skillet. Stir to combine, and pour over the biscuits layer.
6
|
Combine the cream cheese, sour cream, garlic and 1 cup cheddar in a medium bowl, and spread over the meat layer.
7
|
Top with the remaining cheese.
8
|
Bake for 25-30 minutes until the cheese is melted and bubbly.
9
|
Top with fresh parsley to serve.

Tips & Tricks (5)

  • Brown Ground Beef Properly 🍖
Break the lean ground beef into small, uniform pieces while browning to ensure even cooking and maximum surface area for flavor development, then drain excess fat completely before adding taco seasoning.
  • Balance Your Cream Cheese Layer 🧀
Soften cream cheese to room temperature and whisk it together with sour cream before layering to ensure smooth, lump-free distribution throughout the casserole for creamy consistency in every bite.
  • Prep Biscuit Dough Strategy 🥐
Cut jumbo biscuits into quarters and arrange them evenly across the top layer rather than using whole biscuits—this ensures all pieces brown evenly and prevents a thick, doughy center.
  • Strategic Green Chile Placement 🌶️
Distribute roasted green chiles throughout multiple layers instead of just one layer to ensure balanced flavor in every spoonful and prevent them from concentrating in one area.
  • Optimal Resting & Serving Time ⏱️
Let the casserole rest for 5-8 minutes after removing from the oven to allow layers to set and prevent the creamy filling from running; this also makes serving cleaner and more attractive.
