Dressing

1
|
First, add the red wine vinegar, honey mustard, mayonnaise, garlic powder, and sugar to a small bowl. Whisk until smooth.
2
|
Then, while whisking constantly, slowly drizzle the avocado oil into the dressing until it's fully emulsified. Season with salt and pepper, to taste. Set aside.

Slaw

1
|
Add the kale, red cabbage, carrots, apples, sunflower seeds, and blue cheese to a large bowl. Toss to combine.
2
|
Pour half of the dressing over the slaw and toss. Then, add more dressing, to taste. Season with salt and pepper, if needed. Cover and refrigerate the slaw for 1 hour to allow the flavors to meld (optional but recommended). Enjoy!

Tips & Tricks (5)

  • Massage Your Kale First 💪
Massage the raw kale with a pinch of salt for 1-2 minutes before adding other ingredients to break down the tough fibers and make it more tender and digestible.
  • Dice Apples Last-Minute 🍎
Cut your Honeycrisp apples immediately before tossing with dressing to prevent oxidation and browning, preserving their bright color and fresh crunch.
  • Toast Sunflower Seeds for Maximum Flavor 🌻
Lightly toast the sunflower seeds in a dry pan for 2-3 minutes before adding to unlock their nutty, rich flavors and enhance overall depth.
  • Balance Your Dressing Components 🥄
Use Greek yogurt as your mayo replacement base, then whisk in honey mustard and red wine vinegar slowly to achieve a perfectly emulsified, creamy dressing that clings to vegetables.
  • Make-Ahead Timing Strategy ⏰
Dress the slaw 2-4 hours ahead but add apples and blue cheese crumbles within 30 minutes of serving to keep them fresh while allowing other flavors to meld beautifully.
