Instructions

1
|
Preheat the oven to 350F. Line a 9×13 inch casserole dish with parchment paper and spray with oil or nonstick spray (I found that just spray wasn’t enough to keep the pancakes from sticking).
2
|
In a large mixing bowl, whisk and combine pancake mix, eggs, and milk. It should be similar to the normal consistency of pancake batter. Pour the batter into the prepared casserole dish and spread it flat with a spoon or spatula. Add dollops of peanut butter and jelly around the top of the batter, then use a fork to swirl the PB and J around the top as pictured above. More swirls are better than big clumps!

Bake the pancake dish in the preheated oven for 24-28 minutes, or until it is fully set and a toothpick inserted comes out clean. Let it cool for 3-4 minutes before cutting. Serve with maple syrup and fresh berries. Save leftovers in an airtight container for 4-5 days.

Tips & Tricks (5)

  • Swirl Strategy for Even Distribution 🌀
Drop peanut butter and jam in small dollops across the batter before baking, then gently swirl with a knife to create ribbons that distribute evenly without over-mixing, which keeps the pancake fluffy.
  • Room Temperature Ingredients Rule 🌡️
Bring eggs and milk to room temperature before mixing with Kodiak Cakes mix to ensure proper leavening and a more uniform, fluffy texture throughout the baked pancake.
  • Toasted Peanut Butter Secret 🥜
Warm your peanut butter slightly before swirling it in to make it more pliable and easier to distribute, while enhancing its nutty flavor complexity in the finished dish.
  • Berry Placement Timing ⏱️
Add fresh berries to the top of the batter 5 minutes into baking rather than mixing them in, preventing them from sinking to the bottom and bursting, keeping them vibrant and textural.
  • Resting Period for Perfect Texture 😴
Let the baked pancake cool for 3-5 minutes before cutting and serving to allow the crumb structure to set properly, ensuring cleaner slices and better texture instead of a gummy interior.
