Instructions
1
First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
2
Make sugar coating. Mix sugar coating ingredients together in a shallow bowl. Set aside.
3
In the bowl of a stand mixer, add cold butter and sugar. Mix on high for 2 to 3 minutes, until no clumps of butter remain.
4
Then, add in egg, egg yolk and vanilla. Stir to combine.
5
Add all remaining ingredients. Stir to combine.
6
Use a cookie scoop to scoop balls of dough. Place each ball of dough in sugar coating mixture. Roll around until completely covered.
7
Then place on baking sheet. Press down slightly on each ball of dough to create a cookie shape. Repeat for remaining dough.
8
Bake cookies for 10 to 11 minutes or until just barely set in the middle.
9
Finally, remove from oven. Allow cookies to cool for 5 minutes on pan before removing.

The cookies truly taste like a chai latte! I made them with GF flour and DF butter (and without cloves since I didn't have them on hand), and they turned out great. They pair well with a late-night cup of chamomile tea.

Tips & Tricks (5)
- Toast Your Spices First 🌟Lightly toast the ground cloves, cinnamon, ginger, and nutmeg in a dry pan for 30 seconds before mixing to intensify their chai latte flavors and eliminate any staleness from storage.
- Keep Butter Ice-Cold 🧊Cut your cold butter into small cubes and keep it in the freezer until the last moment before mixing to ensure a tender, thick cookie texture with pockets of buttery richness.
- Don't Skip the Sea Salt Finishing Touch 🧂Sprinkle a tiny pinch of fleur de sel or sea salt on each cookie immediately after baking while still warm to enhance the spice complexity and balance sweetness perfectly.
- Use Egg Yolk and Whole Egg Strategically 🥚Add the egg yolk separately first for richness and tenderness, then incorporate the whole egg to provide structure—this two-step approach creates the ideal thick cookie consistency without over-mixing.
- Scoop and Bake Immediately ⏱️Since no chilling is required, scoop dough directly onto pans and bake right away to capture the optimal rise and prevent the dough from spreading too thin during handling.
