  • 24 ounce - boneless skinless chicken breast
  • 2 tablespoon - olive oil
  • 1  - whole lemon
  • ½  - lemon
  • 3 cloves - garlic
  • 2 teaspoon - dried parsley
  •   - Salt and pepper
  • 1 cup - jasmine rice
  • 2 cup - chicken broth
  • 1 tablespoon - butter
  • 2 cup - broccoli
  • 1 teaspoon - garlic powder
  • ½ cup - sharp cheddar cheese

  1. Place chicken cubes in a Ziploc bag with olive oil, lemon juice, lemon zest, garlic, parsley, salt, and pepper. Seal and massage to coat. Marinate for at least 30 minutes, up to 2 hours.
  2. In a saucepan, combine jasmine rice and chicken broth. Cover and cook on low for about 18 minutes, or until rice is tender and liquid is absorbed.
  3. Remove rice from heat and stir in butter, steamed broccoli, garlic powder, and cheddar cheese until well combined.
  4. While rice is cooking, heat a skillet over medium-high heat. Add marinated chicken and cook for 8–10 minutes, stirring occasionally, until chicken is cooked through.
  5. Divide broccoli cheddar rice among four containers and top each with cooked chicken.
