Instructions

1
|
Pat the lentils and chickpeas dry. Make sure to dry them well, otherwise the mixture will be too wet.
2
|
Place the lentils, chickpeas, onion, garlic, eggs, oats, chili powder, paprika, and salt in the bowl of a food processor and pulse until the consistency of thick, chunky hummus.
3
|
Stir the grated carrot into the mixture.
4
|
Using a large ice cream scoop or hands, form the mixture into patties using 1/4 cup of the mixture at a time.
5
|
Heat a thin layer of oil in a skillet over medium-high heat. Cook the burgers for 5 minutes on each side, until golden on the top and bottom.
6
|
In a small bowl, stir together the yogurt, avocado, salt and lemon juice until smooth and well combined. Top the burgers the sauce and place between burger buns.
7
|
Note: If you are using canned lentils and chickpeas, drain and rinse them well before patting dry.

Tips & Tricks (5)

  • Dry Your Legumes Thoroughly 💧
Pat cooked lentils and chickpeas completely dry with paper towels before mixing into the burger base to prevent excess moisture that causes the patties to fall apart during cooking.
  • Chill Patties Before Cooking 🧊
Refrigerate formed burger patties for at least 30 minutes (or up to 24 hours) so they hold together better and develop a golden crust without crumbling on the grill or skillet.
  • Toast Your Oats First 🌾
Lightly toast the rolled oats in a dry pan for 2-3 minutes before adding to the mixture to enhance their nutty flavor and improve the burger's structural integrity as a binder.
  • Make Avocado Sauce Last-Minute 🥑
Prepare the avocado yogurt sauce within 15 minutes of serving and add a squeeze of lemon juice to prevent browning, ensuring a vibrant green color and fresh taste.
  • Sear Then Finish in Oven 🍳
Get a crispy exterior by searing patties 3-4 minutes per side on high heat, then transfer to a 375°F oven for 5-7 minutes to warm through gently without risking them falling apart.
