Instructions

In a large skillet, heat the oil over medium heat. Add in the chicken and top with the turmeric, garlic powder, and cayenne. Cook until the chicken is done on the outside and just beginning to brown (it doesn't need to be cooked all the way through just yet). This will take about 5 minutes.
2
|
Add in the mango chunks, onion, and lime juice and stir together. Cook for an additional 5 minutes or until chicken is cooked all the way through. Use a meat thermometerto check for doneness (165 degrees F).
3
|
When done, take the chicken off of the heat and set aside. Once cooled, cut the chicken into slices.
4
|
To assemble the wraps, top your lettuce wraps with the carrots and zucchini and then top with the mango chicken mixture.
5
|
Optional: top with a bit of cilantro, extra mango, and lime juice.

Tips & Tricks (5)
- Choose Perfectly Ripe Mango 🥭Select mangos that yield slightly to palm pressure and have a fragrant aroma at the stem end. Slightly underripe mangos work better for cooking as they hold their shape and won't become mushy when sautéed with the chicken.
- Pound Chicken for Even Cooking 🔨Pound chicken breasts to uniform ½-inch thickness before cooking to ensure they cook evenly and stay juicy. This prevents dry edges while waiting for thicker sections to finish cooking.
- Toast Spices in Oil First 🌟Bloom your garlic powder, turmeric, and cayenne in the hot oil for 30 seconds before adding chicken to intensify their flavors and create a more cohesive sauce. This prevents raw spice taste and improves overall depth.
- Assemble Wraps Last-Minute 🕐Keep lettuce leaves separate from the warm chicken mixture and assemble wraps immediately before eating to prevent soggy lettuce. Store raw veggies and cooked components in separate containers for easy on-the-go assembly.
- Balance Sweet and Acidic Flavors ⚖️Add lime juice to the mango-chicken mixture just before serving to brighten the sweetness and prevent the dish from becoming cloying. Taste and adjust seasoning as mango sweetness varies by variety.
