Instructions
1
Sun-dried tomatoes are naturally chewy, cooking them down a bit will lend to a softer texture. Warm olive oil in a large skillet over medium heat, add the garlic and sun-dried tomatoes. Let cook for 1-2 minutes, until fragrant, stirring occasionally.
2
Stir in the chickpeas and seasoning and continue to cook for another 1-2 minutes. Canned chickpeas are already cooked, but like the sun-dried tomatoes, cooking the chickpeas down a bit will give them a more tender texture.
3
Bring to a simmer and let cook for about 5 minutes, until the spinach has wilted.
4
Remove from heat and serve immediately with a side of bread, pasta, or rice. Optionally, garnish with fresh basil.

Tips & Tricks (5)
- Toast Your Spices First 🔥Bloom the dried oregano and red pepper flakes in olive oil for 30 seconds before adding other ingredients to unlock their essential oils and intensify the depth of flavor.
- Rehydrate Sun-Dried Tomatoes 🍅Soak sun-dried tomatoes in warm vegetable broth for 5 minutes before adding to the pan so they plump up and release concentrated flavor into the sauce.
- Temper Your Garlic Properly 🧄Add minced garlic after aromatics have softened but before liquid ingredients to prevent burning, which creates bitterness that overpowers the delicate coconut creaminess.
- Save the Spinach for Last 🌿Stir in baby spinach in the final 1-2 minutes of cooking to preserve its vibrant color, nutrients, and fresh taste rather than wilting it into the sauce.
- Adjust Consistency with Coconut Milk Gradually 🥥Add coconut milk slowly while simmering and taste as you go—you can always add more, but removing excess liquid requires additional cooking time and may concentrate flavors unevenly.
