Instructions
1
Add 2 cups of the water to a small pot and bring to a boil. Add mint leaves, then turn off the heat and let steep for 10 minutes.
2
Reserve 3 tablespoons hot water from the pot and add to a small bowl. Add in matcha powder. Whisk with a matcha whisk or frother until combined and frothy. Set aside.
3
Add agave to the pot of mint tea and stir well. Pour through a fine mesh strainer or colander to strain out the mint leaves. You can keep the mint leaves in the drink if desired.
4
To a blender, add the peeled kiwi and the remaining 1/2 cup of water (fresh water, not from the pot of tea) and blend until combined, about 30 seconds. Pour through a fine mesh sieve and press lightly to squeeze out more liquid. Save the remaining pulp for smoothies or other recipes.
5
To a pitcher, combine the kiwi juice, mint tea, and matcha mixture and stir together. Add a handful of ice to two glasses. Pour the tea into the glasses. Alternatively, if you want to skip the pitcher, you can divide the kiwi juice, mint tea, and matcha mixture directly into the glasses, then add ice. Enjoy!

Tips & Tricks (5)
- Matcha Whisking Technique 🥄Use a traditional matcha whisk or small electric frother to dissolve matcha powder in warm water first, then chill—this prevents lumps and ensures a silky, vibrant texture throughout your drink.
- Kiwi Freshness Timing ⏰Add fresh kiwi slices just before serving rather than preparing ahead, as the fruit's enzymes can break down and become mushy in acidic, sweetened beverages over time.
- Mint Infusion Method 🌿Gently bruise fresh mint leaves between your palms before adding to release essential oils and maximum flavor, but avoid shredding them as this causes oxidation and bitterness.
- Layering for Visual Impact 🎨Pour matcha tea over ice first, then slowly add kiwi juice or purée to create stunning color gradients and separate flavor zones that enhance the tasting experience.
- Cold Brew Matcha Base ❄️Prepare matcha in a small amount of room-temperature water before adding to cold tea to preserve its delicate flavor compounds, which can become bitter if shocked by extreme temperature changes.
