Tips & Tricks (5)
- Pre-soak for Perfect Texture 💧Soak broken matzo pieces in milk for 30 seconds to 1 minute—long enough to soften without becoming mushy, creating that ideal creamy-yet-structured bite.
- Whisk Eggs with Seasoning First 🥚Beat eggs with salt and a pinch of white pepper before combining with matzo to ensure even seasoning throughout the entire dish, rather than salting after cooking.
- Medium Heat is Your Best Friend 🔥Cook on medium (not high) heat so the egg sets gently and the matzo crisps at the edges without burning; this prevents a rubbery texture and allows proper browning.
- Butter Over Oil for Richness 🧈Use unsalted butter instead of oil for superior flavor and a golden, crispy exterior that's impossible to achieve with neutral oils alone.
- Press and Flip for Even Cooking 🍳Use a spatula to gently press the mixture into a pancake, then flip only once halfway through cooking to ensure both sides are evenly cooked and crisped.
