Ingredients

  • 1 cup - long grain rice
  • 2 cups - Chicken broth
  • 2 tablespoons - butter
  • ½ tsp - Cumin
  • 1 - Onion
  • 1 - Bell pepper
  • 3 cloves - Garlic
  • 10 ounces - Diced Tomatoes with green chilies
  • 15 ounces - Black beans
  • 15 ounces - Sweet corn kernels
  • ¼ tsp - Salt and pepper
  • 1 - Lime

Instructions

  1. In a large nonstick skillet over medium-high heat melt butter
  2. Add onions and peppers cook until tender and translucent
  3. Stir in garlic and continue to cook for about a minute or until fragrant
  4. Add rice and cook for 2 minutes, stirring constantly
  5. Add in diced tomatoes and chilies, black beans, corn, cumin, salt and pepper to the rice mixture.
  6. Stir in broth and bring to a boil.
  7. Cover with a lid and reduce heat to low, cook for 15 to 20 minutes
  8. Fluff with fork and stir lime zest and juice
