Instructions
1
|
Add ground beef, ground chorizo, diced onion and minced garlic to a large skillet. Cook over medium-high heat until meat is no longer pink. Drain off excess fat and stir in taco seasoning.
2
|
Pour in diced tomatoes with juice, enchilada sauce and water. Break spaghetti noodles into the thirds and add to skillet. Stir until everything is completely combined.
3
|
Reduce heat to simmer, cover and cook for 20-25 minutes, or until pasta is al dente. Be sure to stir the pasta periodically to prevent sticking and clumping.
4
|
When pasta is cooked through, sprinkle cheese on top and cover. Simmer for 5 more minutes, or until cheese melts. Top with sliced green onions before serving.

Tips & Tricks (5)
- Brown Your Chorizo First 🌶️Render the chorizo separately before adding other ingredients to release its flavorful oils and fat, which creates a deeper, more authentic Mexican flavor base for the entire dish.
- Undercook Your Pasta Slightly 🍝Use a cooking time 1-2 minutes less than the package suggests, since the noodles will continue absorbing liquid and cooking in the Instant Pot, preventing mushiness.
- Bloom Your Taco Seasoning 🧄Toast the taco seasoning in the hot oil for 30 seconds before adding liquid to activate its spices and maximize flavor intensity throughout the dish.
- Reserve Sauce for Moisture Control 💧Hold back ¼ cup of enchilada sauce to stir in after cooking—this ensures the final dish has the perfect saucy consistency without becoming watery or dry.
- Top with Fresh Garnishes Just Before Serving 🧅Add the green onions and Colby Jack cheese immediately before serving to keep them fresh and vibrant, preventing them from becoming wilted or overly melted into the hot pasta.
