Ingredients

  • 32 ounces - Frozen corn
  • 1 - Onion
  • ½ cup - Mayonnaise
  • ½ cup - Sour cream
  • 1 tsp - Chili powder
  • 1 tsp - All Purpose Seasoning
  • ½ tsp - Garlic powder
  • ½ tsp - Chipotle chili powder
  • 6 ounces - Queso fresco
  • 3 tablespoons - Cilantro

Instructions

  1. Preheat oven to 350℉ and spray a 13×9 with nonstick cooking spray.
  2. To a large bowl, add the corn, mayonnaise, sour cream, chili powder, garlic powder, All Purpose Seasoning, chipotle chili powder and half of the queso fresco and stir until combined.
  3. Transfer the mixture to the prepared baking dish.
  4. Bake for 35-40 minutes or until heated through.
  5. Remove from the oven and top with remaining queso fresco and chopped cilantro.
