Instructions
1
|
In a large bowl, stir together all of the crust ingredients until well combined.
2
|
Press the mixture into the bottom of a round pie/ tart pan. I made a more traditional crust with mine but you could also spread it all into the bottom if you don't want sides to the crust.
3
|
Place in the freezer to harden while you prepare the rest of the pie (can sit in the fridge/ freezer overnight if desired).
4
|
Scrap the coconut cream out of the can, leaving the liquid/ water behind for use in other recipes (or discard). Place the cream in the bowl of a stand mixer (you can also use a hand mixer for this) and whisk until it begins to really thicken and peaks being to form. Fold in the syrup, and the lemon juice and zest. The mixture might seem a bit too runny at this point but have no fear, it'll harden right up in the fridge.
5
|
Pour the mixture into your crust and place in the fridge for at least an hour (but can be much longer).
6
|
When you're ready to serve, top with thinly sliced peaches arranged neatly and a bit of mint placed around the pie (mostly to add a nice pop of color!).
7
|
Serve and ENJOY!! Please note that this pie doesn't last too long since it has the fresh peaches on top. I would do your best to finish it off within 48 hours (trust me, that won't be hard).

Tips & Tricks (5)
- Peak Peach Selection 🍑Choose ripe, fragrant peaches at their peak season for maximum natural sweetness, reducing the need for extra sweeteners and ensuring the best flavor in your filling.
- Coconut Milk Separation Secret 🥥Refrigerate your full-fat coconut milk overnight before opening to achieve a thick, stable cream layer that whips beautifully without curdling in the filling.
- Lemon Juice Precision 🍋Add lemon juice gradually while tasting, as it prevents the peach filling from becoming cloyingly sweet and enhances the natural fruit flavor without overpowering it.
- Crust Texture with Almond Flour 🌰Toast your almond flour lightly in a dry skillet before mixing with coconut oil for a nuttier, more complex crust that resists sogginess better than raw flour.
- Chill Time Strategy ⏱️Allow at least 6-8 hours of refrigeration for the pie to set properly, but slice with a hot, wet knife and serve cold for the cleanest presentation and ideal texture contrast.
