At my house, Old Fashioned Shepherd’s Pie is the cozy dinner we pull out when the weather turns cold. Savory beef and tender carrots hide under a fluffy blanket of mashed potatoes that bakes up golden and crisp at the edges. Simple to make and big on comfort, it’s perfect for winter nights or St. Patrick’s Day and it always disappears fast.

Ingredients

  • 1 lb - ground beef
  • 2 tablespoons - Onion
  • 2 tablespoons - butter
  • 1 tsp - Salt
  • 2 cups - Carrots
  • 2 ½ cups - Potatoes mashed

Instructions

  1. Preheat oven to 400°F.
  2. Grease 1½ quart heat-resistant glass bowl and set aside.
  3. Melt butter in skillet.
  4. Brown beef and onion lightly in melted butter.
  5. Add salt.
  6. Place cooked, diced carrots in bottom of well-greased 1½ quart heat-resistant glass bowl.
  7. Over carrots, pour browned beef mixture.
  8. Top with mashed potatoes.
  9. If desired, place remaining mashed potatoes in a cake decorating bag and use tips to pipe a design on top.
  10. Bake at 400°F for 15 to 20 minutes or until potatoes are lightly browned around the edge.
