Heat 1 tablespoon of the oil in a large skillet over medium heat. Add the mushrooms and a pinch of salt and cook until browned and the liquid has evaporated, about 4-5 minutes. Place the mushrooms in a bowl and set aside.

Add the remaining tablespoon of oil to the skillet and add the ground beef. Break up the beef into bite sized pieces and cook over medium heat until no longer pink, about 3-4 minutes. Add the garlic and cook 30 seconds more, then drain any excess grease.

Add the wine and beef broth and bring to a boil. Add the egg noodles and cook for 10-12 minutes longer, or until most of liquid has absorbed and the noodles are cooked, turning down the heat slightly as needed. Add the mushrooms back to pan during the last minute or so of cooking time.

Remove from heat and stir in the sour cream until well incorporated. Season with salt and pepper as needed and serve garnished with the chopped chives. Enjoy!
