Instructions
1
Preheat the oven to 400℉.
2
Whisk the dry ingredients together, including the orange zest, in a large bowl.
3
In a separate bowl, whisk the wet ingredients together.
4
Pour the wet ingredients over the dry ingredients and gently but quickly stir it all together. A few lumps are okay but don’t overmix.
5
Scoop batter into a greased muffin tin or into liners in a muffin pan. Bake for 18 to 20 minutes until muffins are golden. Cool for 5 minutes and then turn out onto a wire rack to finish cooling.
6
I store these with no liners in the freezer in a Ziploc bag. They reheat well in the microwave or just when left out to thaw.

Tips & Tricks (5)
- Zest Before Juicing 🍊Zest the orange before juicing it to capture the aromatic oils in the peel, maximizing citrus flavor without the bitterness of white pith.
- Room Temperature Ingredients 🌡️Bring eggs, Greek yogurt, and butter to room temperature before mixing to ensure even incorporation and prevent lumpy batter that results in dense muffins.
- Don't Overmix the Batter ✋Fold ingredients gently and stop mixing as soon as flour disappears; overmixing activates gluten and creates tough, dense muffins instead of fluffy ones.
- Greek Yogurt Drains Moisture 💧If your Greek yogurt is very thick, strain it for 10 minutes to prevent excess moisture in the batter, which can make muffins gummy or soggy.
- Fill Cups Two-Thirds Full 🥄Fill muffin cups to two-thirds capacity and bake in preheated oven at 375°F for 18-20 minutes; this ensures even browning and prevents overflow while maintaining moisture.
