Instructions
1
|
For the Simple Syrup Combine the sugar, water, and diced peaches in a small saucepan set over medium heat. Bring the mixture to a boil and stir to break up the peaches.
2
|
Once the sugar has dissolved, remove the pan from the heat and set it aside to cool for 15 minutes.
3
|
Strain the syrup through a mesh sieve to remove any large pieces of peach. Make sure to press the peaches into the sieve to extract any extra juice.
4
|
Transfer the syrup to an airtight container and store in the fridge until ready to use, or up to three days.
5
|
For the Tea Add the tea bag to a large pitcher, along with the boiling water and simple syrup.
6
|
Allow the tea to steep for 5 minutes. Then, remove the tea bags and stir.
7
|
Fill the pitcher with ice and top with thinly sliced peach. Serve immediately.
8
|
If you don’t plan on serving immediately, make the tea through step 2 and store it in the fridge. Then continue with step 3 when you’re ready to serve.
9
|
If you prefer to let everyone sweeten their drinks to taste, serve the tea and syrup separately and mix directly into the glass to taste (I use about 2 teaspoons of syrup per glass of tea).
Notes

*Raw cane sugar or honey work too.

**I opted for black tea because it’s classic in most iced tea recipes– but this would also be delicious with green tea! I used 1 bag because that’s what the package directions said for 4 cups of water. Make sure to check your tea and adjust if more tea bags are needed!

Tips & Tricks (5)
- Steep Tea at Optimal Temperature 🫖Use water heated to 200-212°F and steep black tea for exactly 3-5 minutes to extract full flavor without bitterness. Over-steeping creates harsh, unpleasant notes that overpower the delicate peach flavor.
- Make Peach Syrup from Fresh Fruit 🍑Simmer fresh peach chunks with sugar and water for 15-20 minutes, then strain through cheesecloth for a silky syrup that delivers authentic peach flavor superior to artificial extracts or canned peaches.
- Chill Tea Properly Before Serving ❄️Cool brewed tea to room temperature first, then refrigerate for at least 2 hours before mixing with peach syrup to prevent dilution and maintain crisp, refreshing flavor when ice melts.
- Balance Sweetness with Lemon Juice 🍋Add fresh lemon juice to your peach syrup or finished tea to brighten flavors and prevent the drink from tasting one-dimensional or overly sweet.
- Use Quality Black Tea Leaves 🍃Choose loose-leaf black tea (Assam or Ceylon) over tea bags for superior flavor depth and clarity that complements peach without competing with it or leaving powdery residue.
