Line an 8×8" square baking dish with parchment paper or foil and set aside.

Place the peanut butter in a medium bowl and microwave for 30 seconds until loosened enough to stir easily. Add the maple syrup, coconut oil and vanilla and stir well to combine.

Add the brown rice cereal and stir until well coated with the peanut butter mixture.

Pour the mixture into the prepared dish and spread evenly.

Place the chocolate in a small bowl and microwave in 30 second increments, stirring after each one until it's completely melted. Pour the chocolate over the peanut butter mixture and spread in a thin, even layer. Top with flaky sea salt and chill for a minimum of 2 hours or overnight. Cut into bars, then serve and enjoy!
