Tips & Tricks (5)

  • Chill Your Peanut Butter Filling 🧊
Refrigerate the peanut butter and powdered sugar mixture for at least 30 minutes before filling to prevent it from melting into the cookie dough during baking and to make it easier to handle.
  • Don't Overmix Your Dough 🥄
Mix wet and dry ingredients until just combined to avoid developing too much gluten, which will result in dense, tough cookies instead of soft and chewy ones.
  • Use Both Sugars for Optimal Texture 🍬
The combination of granulated sugar (crispy edges) and brown sugar (moisture and chewiness) creates the perfect balance—don't skip either one for the ideal cookie texture.
  • Slightly Underbake for Chewy Centers 🍪
Remove cookies when the edges are set but the centers still look slightly underdone—they'll continue cooking on the hot baking sheet and develop a perfectly chewy interior.
  • Seal Filling Completely 🔐
Pinch and press the cookie dough edges firmly around the peanut butter filling to completely seal it, preventing the filling from leaking out during baking and ensuring even cooking.
