Tips & Tricks (5)
- Chill Your Peanut Butter Filling 🧊Refrigerate your peanut butter filling mixture for at least 30 minutes before stuffing to prevent it from melting during baking and ensure clean, defined pockets inside each cookie.
- Brown Sugar for Extra Chewiness 🍪Use a higher ratio of brown sugar to granulated sugar (2:1) to increase moisture and chewiness, creating that signature soft texture that makes these cookies irresistible.
- Don't Overmix Your Dough 🥄Mix wet and dry ingredients just until combined to avoid developing gluten, which toughens cookies; overworking creates dense, cake-like results instead of tender, chewy treats.
- Underbake for Maximum Softness ⏱️Remove cookies from the oven when the edges are set but centers still look slightly underdone—they'll continue cooking on the baking sheet for 2-3 minutes, resulting in perfectly chewy cookies.
- Double-Seal Your Filling Edges 👌Pinch and seal the dough edges firmly around the peanut butter filling using damp fingers to create an airtight seal that prevents filling from leaking during baking.
