Pistachio Muffins

1
|
Preheat the oven to 425 degrees F and line two muffin pans with 6 parchment liners each spaced apart.
2
|
In a small bowl, whisk together the flour, baking powder, baking soda, cardamom, and salt.
3
|
In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugars for 2-3 minutes until light and fluffy.
4
|
Scrape the bowl down, then add the eggs and vanilla and mix until fully combined.
5
|
In a large measuring cup, combine the buttermilk and yogurt.
6
|
While the mixer is on low speed, alternate adding the dry and wet ingredients, mixing until just combined.
7
|
Lastly, fold in the finely ground pistachios until evenly incorporated.
8
|
Fill the muffin cups all the way up to the top.
9
|
Top each muffin with a generous amount of streusel.
10
|
Bake the muffins for 5 minutes, then turn the oven down to 375 degrees F and bake for another 13-15 minutes. Do not open the door when you turn down the temperature.
11
|
Allow muffins to cool for a few minutes in the pan, then transfer them to a wire rack to cool completely.
12
|
Top with powdered sugar if desired and enjoy!

Tips & Tricks (5)

  • Room Temperature Ingredients for Maximum Rise 🌡️
Bring eggs, Greek yogurt, and buttermilk to room temperature before mixing to ensure even incorporation and better chemical reactions with leavening agents, resulting in those signature high domed tops.
  • Toast Pistachios to Intensify Flavor 🥜
Lightly toast your pistachios for 5-7 minutes at 350°F before chopping and adding to the batter to deepen their nutty complexity and make the cardamom pairing even more pronounced.
  • Don't Overmix the Batter 🥄
Fold wet ingredients into dry ingredients just until combined with a few visible streaks of flour remaining; overmixing develops gluten and creates dense, tough muffins instead of tender, fluffy ones.
  • Create the Streusel Texture Balance 🎯
Use cold, cubed butter for your oat streusel and blend with your fingertips until it resembles coarse breadcrumbs—this ensures distinct pockets of crunch rather than a hard, compact topping.
  • Cardamom Blooming Technique 🌟
Lightly toast your cardamom pods and grind fresh just before adding to maximize their warm, floral notes, and sift with the flour to distribute evenly throughout the batter.
