Ingredients

  • 2 scoop - Shiro Plum with Mint Preserves
  • 2 ounces - lime juice
  • 1 ½ ounces - white rum
  •   - Ice
  • 4 ounces - soda water
  • 10  - mint leaves
  • 2 slices - lime

  1. Add 2 heaping spoons of jam to a 16-ounce, wide-mouth canning jar. Pour in 2 ounces lime juice, 10 fresh mint leaves and 2 lime slices. Use a muddler to press the ingredients together for about 15 seconds, until you can smell the mint.
  2. Pour in 1½ ounces white rum (for the cocktail). Add a few cubes of ice and secure the lid onto the jar. Shake for 15 to 20 seconds, ensuring the jam is evenly distributed.
  3. Strain the cocktail into another jar that’s filled with ice. Top with soda water, stir and garnish with extra mint and lime slices. Serve.
