Instructions
1
Pre-heat the oven to 350 degrees F. I prefer silicone molds for this recipe, but if you’re using a 12-cavity muffin liner, grease it thoroughly so the egg bites don’t stick.
2
Heat the oil in a large skillet over medium-high heat. Once hot, add in the potatoes + onion and season with salt and pepper, garlic powder, and paprika. Saute for 8 minutes until the potatoes are just crisp tender. Remove from the heat.
3
Meanwhile, combine the cottage cheese and eggs in the base of a blender and blend until creamy smooth and no chunks remain.
4
Divide the potato mixture evenly in your molds/ muffin tin. Add half the cheese + all of the chives and spinach. Top with the egg mixture. Finally, top with the remaining cheese + more chives.
5
Bake for 18-20 minutes. Broil for 1-2 minutes to brown tops as desired bvut watch them closely so they don’t burn.
Notes
1
Store leftovers in an airtight container in the fridge for up to 4 days. For longer storage, freeze up to 2 months. Reheat in the microwave for 30–60 seconds or in the oven at 325°F until heated through.

Tips & Tricks (5)
- Cottage Cheese Blending Secret 🥄Blend the cottage cheese until completely smooth before mixing with eggs to eliminate lumps and ensure a creamy, custard-like texture throughout the bites.
- Potato Preparation Timing ⏱️Dice potatoes into ¼-inch cubes and parboil for 3-4 minutes, then drain well to prevent excess moisture that can make the egg bites soggy and dense.
- Mold Release Game-Changer 🧈Lightly brush silicone molds or muffin tins with olive oil and let it coat evenly before filling to ensure effortless removal and perfectly shaped bites every time.
- Fresh Chive Addition Strategy 🌿Reserve half your chopped chives to sprinkle on top of the egg mixture just before baking, so they maintain their bright flavor and vibrant green color.
- Optimal Baking Temperature & Time 🌡️Bake at 350°F for exactly 18-20 minutes until the centers are just set but still slightly jiggly—this prevents overcooking and keeps them tender and moist when reheated.
