Tips & Tricks (5)
- Squeeze Out Excess Moisture 💧After grating fresh pumpkin, wrap it in cheesecloth and squeeze firmly to remove excess water—this prevents soggy fritters and helps them crisp up beautifully during frying.
- Bloom Your Rosemary 🌿Finely mince fresh rosemary and let it sit with the grated pumpkin for 10-15 minutes before mixing the batter to release its essential oils and deepen the herbal flavor.
- Double-Check Oil Temperature ♨️Maintain oil at 350°F using a thermometer—too cool produces greasy fritters, while too hot burns the outside before cooking the inside. Test with a small piece of batter first.
- Rest the Batter Briefly ⏱️Let your mixed batter sit for 5 minutes after combining ingredients to allow the baking powder to activate and the flour to fully hydrate, resulting in fluffier, more tender fritters.
- Brown Your Fritters Properly 🟤Fry in batches without crowding the pan, flipping only once when the bottom is deep golden-brown—patience ensures even cooking and a crispy exterior while keeping the inside moist.
