Tips & Tricks (5)

  • Dry Your Chicken Thoroughly 🌬️
Pat the chicken breasts completely dry with paper towels before roasting to achieve golden, crispy skin and prevent steaming in the pan.
  • Slice Lemons in Half for Caramelization 🍋
Cut lemons in half lengthwise rather than rounds, then place cut-side down directly on the hot pan to develop deep caramelization and concentrate their sweet, tangy flavor.
  • Use Proper Pan Temperature 🔥
Preheat your roasting pan in a 425°F oven for 5 minutes, then add hot oil before placing chicken to ensure immediate searing and beautiful browning.
  • Preserve Olive Integrity 🫒
Add pitted olives to the pan during the last 10 minutes of cooking to prevent them from becoming mushy while allowing them to warm through and absorb pan juices.
  • Rest Between Sear and Roast ⏱️
After searing the chicken, let it rest for 2-3 minutes before adding tomatoes and aromatics to allow carryover cooking and ensure even moisture retention throughout.
