  • 1 head - garlic
  • 1  - shallot
  • 1 tablespoon - olive oil
  • ½ cup - cilantro
  •   - Salt
  •   - Pepper
  • 1 teaspoon - oregano
  • 1 teaspoon - cumin
  • 1 teaspoon - thyme
  • 2 tablespoon - chicken broth
  • ½  - lemon
  • 1  - ripe avocado
  • 2 cup - rice

  1. Preheat oven to 400°F (204°C).
  2. Wrap the garlic head and shallot in foil with a drizzle of olive oil. Roast for 30–40 minutes until soft and caramelized.
  3. Once cooled, squeeze the roasted garlic out of the skins and remove peel from the shallot.
  4. In a food processor, combine roasted garlic, shallot, cilantro, oregano, cumin, thyme, salt, pepper, lemon juice, and chicken broth. Blend until smooth.
  5. Add in the avocado and blend again until fully incorporated and creamy. Adjust consistency with more broth if needed.
  6. Stir the avocado herb sauce into warm cooked rice until evenly coated.
  7. Serve warm as a flavorful side or base for your protein of choice.
