Tasted so good! Super fun to make with friends and will definitely make again soon. I think next time I will only do 3 peppers instead of 4. But overall so yummy!



This Roasted Garlic Tomato Soup is a cozy, comforting dish full of rich, savory flavors. Sweet roasted tomatoes, caramelized garlic, peppers, and onions are blended with cream, broth, and basil to create a silky, deeply flavorful soup. Served with buttery grilled cheese for dipping, this meal is perfect for a crisp evening or a casual weekend lunch. A homemade twist on the classic pairing, made even better with roasted aromatics.

Preheat oven to 425°F (220°C).
Cut tomatoes, garlic, peppers, and onion as instructed. Spread on a baking sheet.
Drizzle generously with olive oil and season with salt and pepper.
Roast for 25 minutes, until vegetables are soft and lightly caramelized.
Transfer roasted vegetables and pan juices to a blender.
Add heavy cream, chicken broth, and basil. Blend until smooth and creamy.
Taste and adjust seasoning. Optionally reheat in a pot before serving.
Serve hot with grilled cheese.
