Instructions

1
|
Preheat oven to 400℉ and grease a 9" x 13" baking dish with 1 tablespoon oil. Set aside.
2
|
Place ½ cup rice and 2 packages of Lipton Chicken Noodle soup in a soup pan along with 5 cups water and bring to a boil.
3
|
Reduce to a simmer and cover with a lid. Cook until water is absorbed, about 10-15 minutes.
4
|
Heat a skillet over medium-high heat.
5
|
Cook minced sausage until browned, about 6-8 minutes. Remove to prepared casserole dish.
6
|
Add remaining 1 tablespoon of oil to skillet, if needed.
7
|
Mince the onion, green pepper and celery. Add to the hot skillet and season with salt, seasoning salt, oregano and pepper.
8
|
Cook until onions are lightly golden and translucent.
9
|
Remove veggies from heat and transfer to casserole dish.
10
|
Once rice and soup mixture is cooked, transfer to casserole dish.
11
|
Stir pork, veggies and rice mixture together in casserole dish.
12
|
Bake casserole dish uncovered for 45 minutes to 1 hour until browned on top.

Tips & Tricks (5)

  • Brown Sausage Properly First 🍖
Break the sausage into small chunks and brown it thoroughly in oil before adding other ingredients—this develops deep flavor and renders excess fat that would otherwise make the casserole greasy.
  • Sauté Vegetables Before Mixing 🧅
Cook the celery, green pepper, and onion in the sausage drippings for 3-4 minutes before combining with rice and broth to soften them and layer flavors throughout the dish.
  • Use Broth Instead of Water 💧
Replace the water with chicken or beef broth and skip the Lipton packet for deeper, more authentic flavor—or use the packet as a secondary seasoning layer for enhanced umami.
  • Cover and Steam for Fluffy Rice ☁️
Keep the casserole covered with foil during the entire cooking time to trap steam and ensure the rice absorbs liquid evenly without drying out the top layer.
  • Rest Before Serving 🧘
Let the finished casserole sit covered for 5 minutes after removing from the oven—this allows the rice to set properly and makes serving cleaner portions without a mushy texture.
