Tips & Tricks (5)
- Thaw Pearl Onions Partially 🧅Remove pearl onions from the freezer 5 minutes before cooking—partial thawing prevents them from bursting while ensuring they caramelize properly in the ghee.
- Zest Lemon Before Juicing 🍋Always zest your lemon first, then juice it; the zest adds bright, concentrated flavor that juice alone cannot provide, making it essential for this 10-minute dish.
- Bloom Garlic in Ghee First 🧈Toast minced garlic in hot ghee for 30 seconds before adding vegetables to develop deeper flavor and prevent the quick-cooking peas from overpowering the dish.
- Reserve Fresh Dill Until the End 🌿Fold in fresh dill in the final 20 seconds of cooking to preserve its delicate, grassy notes—heat will diminish its signature flavor if added too early.
- Use Hot Stock for Speed ⏱️Heat your vegetable stock beforehand so it doesn't cool the pan temperature; this maintains the sauté and ensures everything finishes cooking in exactly 10 minutes.
