  • 1 pound - shrimp
  • 1 tablespoon - low-sodium soy sauce
  • 1 teaspoon - garlic powder
  • 1 teaspoon - onion powder
  • 4 cup - brown rice or cauliflower rice
  • 1 cup - frozen peas and carrots mix
  • 1 cup - bell pepper
  • ½ cup - red onion
  • 3 cloves - garlic
  • 1 cup - broccoli florets
  • 2  - eggs
  • 3 tablespoon - low-sodium soy sauce
  • 1 tablespoon - rice vinegar
  • 1 teaspoon - sesame oil
  • ½ teaspoon - ground black pepper
  • 2  - green onions
  •   - Light drizzle of unagi sauce

  1. In a bowl, toss shrimp with 1 tbsp soy sauce, garlic powder, and onion powder. Set aside.
  2. In a large pan or wok, heat a small amount of oil over medium heat. Add shrimp and cook until pink and opaque. Remove and set aside.
  3. In the same pan, add garlic, red onion, bell pepper, broccoli, and the peas and carrots mix. Stir-fry for 3–4 minutes until softened.
  4. Push veggies to the side and pour beaten eggs into the empty space. Scramble until just set, then mix into the vegetables.
  5. Add cooked rice, shrimp, 3 tbsp soy sauce, rice vinegar, sesame oil, and black pepper. Stir well to combine and heat through.
  6. Top with green onions and a light drizzle of unagi sauce if using. Serve hot.
