Tips & Tricks (5)
- Marinade Timing for Maximum Tenderness 🕐Marinate skirt steak for 4-8 hours minimum; the lime juice's acidity breaks down muscle fibers, and the tequila enhances flavor penetration without over-marinating like longer periods would.
- Slice Against the Grain 🔪After resting, cut the steak against its natural grain at a 45-degree angle to shorten muscle fibers, ensuring maximum tenderness in every bite of your fajita.
- High Heat Searing for Restaurant Quality 🔥Pat meat completely dry before cooking and use a smoking-hot cast iron or steel skillet; this creates a flavorful crust while keeping the interior juicy and tender.
- Build Layers with Caramelized Vegetables 🧅Cook peppers and onions separately until deeply caramelized before combining with the steak; this concentrates their sweetness and prevents soggy fajitas from excess moisture.
- Rest the Cooked Steak Away from Heat ⏸️Let the steak rest 5 minutes before slicing on a warm plate, not cutting board; this allows residual heat to continue gentle cooking while preserving precious juices for maximum flavor.
