Tips & Tricks (5)

  • Marinade Against the Grain 🔪
Always slice skirt steak against the grain after marinating to break down muscle fibers and maximize tenderness and marinade absorption.
  • Dry Before Searing 🏜️
Pat the marinated steak completely dry with paper towels before cooking to achieve a perfect crust and caramelization on high heat.
  • High Heat Sear Strategy 🔥
Use extremely hot oil (cast iron skillet is ideal) and sear the steak for only 3-4 minutes per side to develop a flavorful crust while keeping the interior medium-rare.
  • Marinade Timing Optimization ⏱️
Marinate for 4-8 hours maximum; beyond this, the acid in the tequila and lime will over-tenderize the meat, making it mushy and compromising texture.
  • Rest and Slice Smart 🥩
After cooking, rest the steak for 5 minutes, then slice thin at a 45-degree angle against the grain for ideal fajita strips that retain moisture and tenderness.
