Instructions
1
|
Place the first 10 ingredients in a slower cooker and set to low for 6 hours or high for 4 hours (the soup can remain in the slow cooker up to 8 hours on low at this point).
2
|
After the soup has cooked for 3 hours (on high) or 5 hours (on low) remove the chicken from the slow cooker and set aside.
3
|
Add the pasta into the slow cooker and cook for an additional 30 minutes or until tender. Do no overcook as the noodles will get soggy.
4
|
While the pasta is cooking, remove the bones if necessary and shred the chicken into bite size pieces and add back into the soup.
5
|
Garnish with chopped parsley and serve with crackers if desired.

Tips & Tricks (5)
- Add Pasta Late for Perfect Texture 🍝Don't add pasta at the beginning—add it in the last 30-45 minutes of cooking to prevent mushiness and maintain its al dente bite in the broth.
- Sauté Aromatics First for Depth 🧅Quickly sauté the onions, leeks, carrots, and garlic in a hot pan for 3-4 minutes before adding to the slow cooker to build a flavor foundation that elevates the entire soup.
- Use Bone-In Chicken Parts for Superior Broth 🍗Choose bone-in, skin-on chicken thighs or breasts over boneless cuts—the bones and collagen create a silkier, more gelatinous broth as it simmers for hours.
- Reserve Fresh Parsley for Finishing 🌿Hold back the fresh parsley and stir it in just before serving to preserve its bright, fresh flavor rather than letting it become dull during the long cooking process.
- Skim the Surface Halfway Through ✨About halfway through cooking, carefully skim any foam or impurities from the surface of the broth using a ladle for a cleaner, clearer, more refined-tasting soup.
