Instructions
1
|
Place the first 10 ingredients in a slower cooker and set to low for 6 hours or high for 4 hours (the soup can remain in the slow cooker up to 8 hours on low at this point).
2
|
After the soup has cooked for 3 hours (on high) or 5 hours (on low) remove the chicken from the slow cooker and set aside.
3
|
Add the pasta into the slow cooker and cook for an additional 30 minutes or until tender. Do no overcook as the noodles will get soggy.
4
|
While the pasta is cooking, remove the bones if necessary and shred the chicken into bite size pieces and add back into the soup.
5
|
Garnish with chopped parsley and serve with crackers if desired.

Tips & Tricks (5)
- Add Pasta Late for Perfect Texture 🍝Cook pasta separately or add it in the last 30 minutes of slow cooking to prevent mushiness; al dente pasta absorbs broth beautifully without becoming mushy.
- Sear Chicken First for Deep Flavor 🍗Brown chicken parts in a skillet before adding to the slow cooker to develop complex Maillard flavors that elevate the entire broth's depth.
- Use Leek Whites and Greens Strategically 🌱Add white and light green parts during cooking for subtle flavor, then reserve dark green parts to steep at the end for a fresh herbal boost without bitterness.
- Bay Leaves and Thyme: Timing Matters 🍃Add dried thyme throughout cooking, but remove and discard bay leaves before serving—they can splinter and are meant for subtle flavor extraction, not eating.
- Finish with Fresh Parsley and Reserved Broth 💧Reserve some hot broth before serving, then finish each bowl with fresh parsley and a splash of reserved broth to restore brightness and aroma that slow cooking diminishes.
